Gluten Free Bread (Bread Machine)
Glutan Free Bread Dough Flour (makes about 9 cups)
This is an adaptation from Bette Hagman’s mix
2 cups Garbanza bean flour
1 cup sorghum flour
3 cus cornstarch
3 cups tapioca flour
Mix well and store in a large sealed glass jar
Basic Bread (1 lb machine) [2 lb machine]
2 cups [4 cups] Glutan Free Bread Dough Flour
1 1/2 [3]teaspoons xanthan gum
1/2 [3/4] teaspoon salt
1 [2] teaspoon unflavored gelatin
1 [2] teaspoon Egg Replacer
2 [4] tablespoons sugar
2 1/4 teaspoons dry yeast granules
1 [2] egg plus 1 egg white
3 [6] tablespoons margarine or butter
1 [2] teaspoon vinegar
about 1 [2] cups warm water
Mix all dry ingredients together, place in bread machine
In a bowl whisk the eggs together and then all vinegar, most of the water and margarine/butter. Add to the mixture in the bread machine and start. Use the white bread, medium crust settings. Start mixing, add more water if necessary to have a smooth not sticky ball of dough.
